I think that it is required by law to eat at diners if you live in New Jersey. My favorite diner by far is The Skylark Diner in Edison, NJ. It’s a little haul up north for us, but well worth the trip!

My lunch choice was the….
Lebanese Lamb Wrap
Roasted leg of lamb with roasted tomatoes, tzatziki sauce, pine nuts, roasted eggplant, olives and couscous, garnished with mixed greens tossed in balsamic vinaigrette.
Fabulous…very fresh and the lamb was as tender as butter.
My attempt at being artsy-fartsy with our beverages. ( I know…don’t quit my day job, right? )

This is much belated … but since I’m browsing your blog … I love, LOVE diners. And, NJ, is blessed with so many good ones. I’d be hard pressed to choose a favorite,I especially love the Tick Tock Diner in Clifton, NJ. Its wonderful.

Skylark is also my all-time fave diner, and as an NJ native, that means a lot! Lucky for me, it’s less than 10 minutes from my home!
