Raspberry Lemonade Cupcakes

Last week’s giveaway (there are still a few days left to enter!) gave me a great idea for a  cupcake creation. When I visited Janine over at Things That Make Scents she was telling me about a new cupcake candle that she was experimenting with.

I arrived home from that visit with a plan to make a cupcake that would smell as good as it tasted. I decided to combine two of my favorite summer smells and a favorite summer drink into a cupcake creation.

Lemons, raspberries and raspberry lemonade.

Needing a base to start with I turned to one of my favorite cupcake recipes and made adjustments for the new flavors. I knew that the flavors would be intense so I made the cupcakes into minis.

Raspberry Lemonade Cupcakes

For cupcakes:

1 (18 1/4 ounce) package white cake mix
1 (3 ounce) package raspberry gelatin
1 cup fresh raspberries ( will need extra to top the cupcakes)
3/4  cup vegetable oil
1/2 cup half and half
4 eggs

For frosting:

1/2 cup shortening
1/2 cup butter, softened
1 (8 ounce)  bar cream cheese, softened
1 teaspoon vanilla extract
2 lbs powdered sugar, sifted
2 tablespoon fresh lemon juice
zest of one lemon

For cupcakes:
In a large bowl, stir together cake mix and gelatin.Add the raspberries, oil, milk and eggs. Beat on low speed until blended. Scrape bowl and beat 2 minutes on medium speed. Pour batter into prepared cupcake pans.

Bake at 350 for 12 to 15  minutes.( until cupcakes test done)
Cool and remove from pans.

For the frosting:

Cream together shortening, butter, and cream cheese and vanilla until  smooth. Sift sugar, and slowly add to shortening mixture. Add lemon juice and lemon zest,  mix well.

Top each cupcake with a small raspberry and lemon zest.

I’m very glad that I decided top make these into mini cupcakes. The flavors are fabulous and intense. You get the sweetness of the raspberry cake and also the tartness of the lemon loaded frosting. The sweet and tart combination will remind you of one of your favorite childhood candies. These little guys will sucker punch your mouth with flavor. If you want to recreate the feeling of summer just make a batch of these and serve them along side a pitcher of fresh brewed iced tea. I also recommend a little summer music to go along with your Raspberry Lemonade cupcakes…

I know that we are only into the first few days of Spring…but I just can’t help myself. The first signs of Spring make me long for the lazy days of Summer. Now that I’m an official “clam digger” (that’s what they call us local Shore folk) you can ask me again in a few months if I’m still happy that it is Summer. By then,  my little town at the Jersey Shore will be over run with tourists. It will take me a half hour to get out of my drive way and instead of my ride home from work on a Friday taking me 40 minutes…it will turn into an hour and a half. I’m positive that my outlook will be different then. But for now…I want Summer and all of it’s wonderful smells.  My friend Janine from Things That Make Scents has captured these beautifully with her summer candle creations. My Baked Zucchini Needs Your Help!

Are you up for a recipe makeover challenge? If so, I have the perfect recipe that desperately needs a makeover!

Baked Zucchini

Leave it to my family to take a perfectly healthy vegetable and find a way to make it totally unhealthy. Completely delicious of course, but not great for the waistline. My family has been making variations of this dish for years. You take perfectly nutritious zucchini, season them  lightly and grill…

then you melt a stick of butter and mix in chives, or garlic, or onions…

then add shredded cheese and sour cream…

slather the whole mess over the zucchini…

top with bread or cracker crumbs and parmesan cheese…

and baked until browned….

My challenge to you is to makeover one of my family favorite recipes so that it still tastes as good as the original, but won’t start clogging your arteries with the first bite…

Inspirations from this Week

I’m returning to my normal Friday postings of recipes, dishes and articles from my fellow food bloggers that have given me inspiration over the past week. I’ve missed doing this Friday post and I’m happy to say that it will now become a regular happening here at Life, Lightly Salted.

My RSS reader is packed to the gills with food blogs. Sure, I have several news feeds as well as The Consumerist, Life Hacker, Download Squad and various music blogs, but I have to admit that 80 percent of the feeds in my reader are food blogs. There is so much creativity and great food out there. Every Friday I will share a few of my favorite gems with my readers.

She made a fantastic Irish Eggs Benedict. Corned beef hash, eggs, English muffins and horseradish gravy. I made it for dinner on Sunday night and it was delicious!  I slow cooked a corned beef brisket most of the day on Saturday. Then chopped up part of it for the hash. I left the skins on my potatoes and threw in loads of extra onions into my hash. The best part was definitely the horseradish gravy. It made the dish! Big Red Kitchen’s Irish Eggs Benedict

 

Dawn over at Vanilla Kitchen made an amazing snack…Moroccan roasted chickpeas. It made me want to run to the kitchen and whip up a batch of mojitos, kick back and do some serious snacking. I’ll definitely be making these over the weekend! They are going to be a great snack to munch on while we are watching movies.

Over at Serious Eats they had an article on 30 ways to use up left over salsa. There are some great ideas there! I especially loved the idea of mixing left over salsa with mayo to use as a dipping sauce for fries. I have a friend from Venezuela that mixes catsup with mayo to have with her fries. She tells me that it is very common where she is from. I’ve tried it on several occasions and enjoyed it. I bet using salsa instead of catsup will really jazz the dipping sauce up!

Serious Heat: 30 Things To Do With Leftover Salsa

(looks like the story has temporarily disappeared from the Serious Eats website…so I will give you the top 10 of the 30. When the article reappears I will link it so that you can read all of the great uses!)

1. Mix with mayo or ketchup; use as a dip for French fries.

2. Combine with softened butter and refrigerate for a salsa compound butter; add thin slices to a grilled steak.

3. Stir into scrambled eggs or add to omelets and frittatas.

4. Spoon into cooked grits; add bacon and cheese.

5. Add to burger meat mixtures or slather on top of burgers (or both!).

6. Add lime juice and canola oil to a thin, puréed salsa like Rosa Mexicano Chile Pasilla de Oaxaca Salsa and marinate meat.

7. Replace tomato sauce for a chunky tomato salsa on a homemade pizza.

8. Make a béchamel sauce, add salsa and toss with pasta.

9. Stir into cooked rice; add olives and cheddar cheese.

10. Layer onto a grilled cheese sandwich.
