We Have Our Winners and a Slice!

I survived yet another Black Friday. I’m sore and exhausted but I made it through. I apologize for not having the time to get around and visit everyone in the past week and answer your e-mails. I plan on doing little more than resting today. I’m sure that my body will thank me later.

It was wonderful to hear what everyone was making for Thanksgiving dinner. There were so many different cultures and traditions represented. Thanks to you. my great readers…I’ve picked up a few ideas for next year. After the craziness of my season I think that I’ll be borrowing from Dawn and her new tradition of visiting their favorite Chinese restaurant for their holiday dinner. The stress of putting dinner together and then going to work at 3 AM the next morning was much to stressful for me. I think we will be doing our actual Thanksgiving dinner a few days after the holiday next year.

Are most of you dining on leftovers this weekend?  I can’t do it…really I can’t. Two days of turkey and trimmings and I’m finished! Today I will be getting rid of the leftovers and making something simple and fresh.

Spinach, Apple and Sausage Pizza. Now doesn’t that look better than a leftover turkey sandwich? I finally found a pizza dough that Phil and I can agree on. Thin enough to make Phil happy and sturdy enough to suit my tastes.

Pizza Crust (New York Style)

2/3 cup water (110 °F )
1 teaspoon sugar
1/8 ounce fast rise yeast
1 3/4 cups all-purpose flour or bread flour
1/2 teaspoon salt

Combine water and sugar in small bowl; stir to dissolve sugar.
Combine flour, yeast and salt in mixer bowl.
Stir in water mixture.
Mix with the dough hook attachment until mixture forms soft dough.
Knead 5 minutes or until dough is smooth and elastic, adding additional flour, 1 tablespoon at a time, as needed.
Place dough in medium bowl coated with nonstick cooking spray.
Turn dough in bowl so top is coated with cooking spray; cover with towel or plastic wrap.
Let rise in warm place 20 minutes or until doubled in bulk.
Punch dough down; place on lightly floured surface and knead about 2 minutes or until smooth.
Pat dough into flat disc about 7 inches in diameter.
Let rest a few minutes.
Pat and gently stretch dough from edges until dough seems to not stretch anymore.
Let rest 2 to 3 minutes.
Continue patting and stretching until will fit your 12-14" pizza pan.
Spray pizza pan with nonstick spray.
Press dough into pan.
Preheat oven to 475 F.
Add your favorite sauce and toppings and bake in the bottom rack of the oven until lightly browned and crisp.

Staying Sane During the Holidays

Sunday was my last relaxing day before Thanksgiving. I took full advantage of it. We started our day by braving the crowds and getting our Thanksgiving dinner shopping taken care of early. I thought that everyone would still be sleeping early in the morning and that the market would be like a ghost town. This couldn’t have been further from the truth. Foodtown in Neptune City was already packed and people were in frenzy mode at 9:00 AM. What is it about the holiday season that makes people go crazy and throw courtesy and common sense out the window?  I was amazed to watch people elbowing each other to get at the turkeys and hams. Luckily I had a very small shopping list thanks to a well stocked pantry and it only took us about 45 minutes to work our way through the crowds. We had to spend time decompressing when we arrived home. When did going to the market become so stressful?

When we got home I  made one of the recipes from The Splendid Table. I am totally addicted to their podcasts! I listen to them on my Zune on my way to work every morning. I was listening to one of the podcasts on Friday and heard  Lynne Rossetto Kasper talking about Ultimate Cheater’s Pulled Pork form the book Cheater BBQ: Barbeque Anytime, Anywhere in Any Weather. I had to try it!  The entire day the apartment smelled like hickory and pork. (Phil thought it smelled like hot dogs!) It was a refreshing change of smells for a cold Fall day. Fabulous recipe! Try it if you are craving a little BBQ in the middle of winter. It will hit the spot. I served ours on fresh Portuguese hard rolls with a side of pickles and frosty mugs of root beer.  Of course I forgot to snap any photos of the sarnies, but trust me, they were wonderful.

I also baked yesterday. Soft chocolate chip cookies to take to work today for my employees. They work so hard this time of year that I try to treat them from time to time. I also plan to make them a huge pasta bake for Friday.  After all it is our busiest day of the year and the pasta will be great for a full belly and some quick energy.

We spent the rest of the day lounging around watching the History Channel and taking cat naps. I really needed my  batteries recharged before Friday. We all deserve a lazy day once in a while. There’s nothing like it to refresh your mind and energize your body.

I’m not stressed about Thanksgiving this year at all. We have decided to stay home for dinner. There will only be three of us this year. I think that I can put a Thanksgiving dinner together stress free for three people. I never did understand why people get so stressed about the holidays. They are supposed to be a time to enjoy yourself, spend time with the ones you love and to spread peace and good will. I don’t think that memories of the holidays are ever about an over the top meal or the perfect gift. They are about sharing happiness and companionship with the people you love. The best joys in life are the small things. I hope that we can all keep this in mind while we are preparing for the holiday season. Relax a little and enjoy the time spent with your family and friends.

The Crazy Season Is Here

I’m two weeks  into the crazy season at work. Four more weeks and it will all be over. That is… until next year when I’ll do it all over again. Working retail during the holiday season is a thankless and exhausting job. My survival kit is packed in an old Trader Joe’s cloth tote. ( Percogesic, Thermacare wraps, coffee, popcorn, ice packs, bottled water and a fluffy pair of socks) And I’m ready for another holiday season. I want everyone to know that my posting, visiting and replies will be sparse for the next few weeks due to work demands.

Because my time is so limited this time of year I keep the food very simple. A short list of ingredients and quick preparation are very important to me when my time is so crunched. Chicken primavera is one of those dishes that I can put on the table in the time that it takes to cook the pasta.

There isn’t much of a recipe for my chicken primavera, but I’ll give it a go at explaining it.

Saute 1/2 pound of thin chicken breast in olive oil and house seasoning until browned. Remove from pan and deglaze pan with 1/4 cup white wine.

Then throw  your vegetables into the pan. I like to use carrots, broccoli and cauliflower. I’ve also used green beans, peas, mushrooms and water chestnuts with great results. Saute until they are crisp tender. Add a jar of your favorite alfredo sauce. (we use Classico’s roasted garlic alfredo) Heat through and toss everything with a half pound of cooked pasta. Garnish with chopped parsley and shaved parmesan cheese. Nothing fancy here, just a classic and quick dinner. Chicken primavera is one of those dishes that  will never let you down.

Cookies for a Friend

This batch of cookies was made in reply to a comment that was left on my Nutella Cookie Bars post.

This comment really started me thinking. I make all of these goodies and they just sit around the house. Once in a while I do take my creations to work to share. But other than that they just sit around the house getting stale. Seriously, there are only so many Nutella bars that you can eat before you say “enough already!”  I decided that I would make a batch of extra special cookies to drop off to my favorite candle lady. She deserved a treat! I made her Glace Cherry cookies to thank her for bringing my favorite candle scent  back this year for the holidays…

This cookie is not the most beautiful cookie in the world. What it lacks in the looks department it makes up for in taste. They are divine!

Glace Cherry Cookies

adapted from Recipezaar recipe #147161

  1 cup Crisco
  1 1/2 cups white sugar
   2 large eggs
  1 teaspoon almond extract
  2 cups flour
  1 teaspoon baking powder
  1/4 teaspoon salt
  1 cup mini chocolate chips
  1  cup shredded coconut
  1  cup chopped glace cherries (easier to do when frozen)

Cream shortening and sugar in large bowl with electric mixer until well blended.
Add eggs and almond extract, beating on medium speed until light and fluffy; about 2 minutes.
Combine flour, baking powder and salt. Add to creamed mixture gradually, beating on low speed just until blended. Fold in chips, coconut and cherries.
Drop dough by spoonfuls onto greased cookie sheets.
Bake at 350° for 12-15 minutes or until lightly browned around edges.
