Basil, Sweet Basil, My Love

There is nothing that I love more in the summer months than fresh basil.

Legend and lore have surrounded basil for centuries.

In Romania, if a boy accepts a sprig of basil from a girl, it means they are engaged to be married. In Italy, young maidens would wear a sprig of basil in their hair to profess their availability. In modern Greece, basil is used in certain religious rituals as a symbol of fertility.

Of course basil has a dark side as well. In Greek mythology basil was considered to be a cure against the bite of the basilisk. ( a part dragon, part lizard creature) Basil was long thought to be the cure for any venomous bite.

I think that basil is the most refreshing, stimulating and delicious of all the herbs. I use it every time that I am given the chance. I love it torn up in salads, simmered in a good red sauce, eaten as a refreshment between other stronger flavors (like pickled ginger when you eat sushi) and I especially love it thrown in my bathtub. I find it just as soothing as lavender.

This time around I used my fresh basil in a quick pasta salad.

The salad is a very simple one. Extra virgin olive oil and red wine vinegar are drizzled over cooked pasta. Then fresh torn basil and sliced campari tomatoes are added to the pasta. The salad is finished up with sliced English cucumbers, fresh chopped oregano, Bocconcini and a generous amount of freshly ground pepper.

Simplicity at it’s best. I love making these simple salads. They let the beauty of the fresh herbs shine through.

Of course I wasn’t satisfied with just having a fresh basil salad. I had to make a batch of sweet basil soap too.

Now on to the food…

Here is a quick sandwich that it inspired by the famous sandwiches that they serve at Primanti Brothers in Pittsburgh. I used to travel to Pittsburgh on business once a month and would always stop in for a sandwich. I haven’t had the chance to have anything from Primanti since moving to the Jersey Shore. So I set out to make my own version at home.

I love Wegmans marinades. For a premade bottled marinade they are top notch. During my last visit I picked up a very interesting looking Chicken BBQ marinade. I had never come across a white barbeque sauce before and just had to throw it in the cart. This sandwich creation gave me a great reason to try it out.

I marinated boneless, skinless chicken thighs in the marinade overnight and then grilled them to a beautiful golden brown.

Then I tried my hand at making my own version of Primanti Brothers sandwich slaw.

1 pound  green cabbage, finely shredded (5 to 6 cups)

1/2 cup sugar

1  teaspoons kosher salt

1 teaspoon onion powder

1/4 teaspoon celery seed

1/4 cup olive oil

1/3 cup apple cider vinegar

Freshly ground black pepper

Then I made a batch of extra crispy french fries, grabbed a few tortillas and wrapped everything up together.

While this is not the authentic Primanti sandwich, it was still mighty tasty. I enjoyed my version of the sandwich slaw more than the original.
The next time that I make these I plan on combining corned beef, the slaw, fries and a few thick slices of grilled rye bread. Mmmmmmmm!

I decided to throw my offering into the ring. A simple cheddar cracker spiced up with fresh chives and dry mustard. The dough for these little crackers comes together very quickly. (I would have been making them much sooner had I known how simple they were to make! ) They bake up in no time flat and are fantastic served with sliced apples and candied walnuts. I decided to use my crackers for dipping and made a fresh apple salsa to go along with them.

Chived Cheddar Crackers

4 ounces cheddar cheese, grated
2 ounces parmesan cheese,  grated
3/4 cup flour
1/4 teaspoon dry mustard
3 tablespoons snipped chives
1/4 teaspoon sea salt
1/4 cup unsalted butter, cut into small pieces
2 tablespoons water

In food processor, place all the ingredients except the butter and water. Pulse 5 times. Add  the butter and pulse again until the butter pieces are the size of small peas.

Add the water, 1 tablespoon at a time, and pulse just until the dough holds together. (if still crumbly add a few drops of water at a time and pulse until dough holds together)

Place dough onto waxed paper. Roll the dough into a log and secure the ends of waxed paper by twisting.

Place dough in freezer for 2 hours.

Preheat the oven to 375°F

To make the crackers, cut the log into 1/4-inch-thick slices. Arrange the slices on a baking  sheet 1 inch apart. Bake for 8  minutes. Turn the crackers over and bake for  5 more minutes.

Serve at room temperature with your favorite spreads and dipping sauces.

Apple Salsa

1 red delicious apple, cored and chopped
1/2 orange bell pepper, chopped
1/2 small red onion chopped
1 stalk of celery, chopped
4 tablespoons fresh lime juice
2 tablespoons honey
3 tablespoons fresh mint, minced

In medium glass bowl combine the red delicious apple, orange pepper, onion and celery.
In a separate bowl, whisk together lime juice, honey and mint.
Pour the sauce over the salsa mixture and toss well to coat.
Chill for several hours to combine flavors.

I know that we are only into the first few days of Spring…but I just can’t help myself. The first signs of Spring make me long for the lazy days of Summer. Now that I’m an official “clam digger” (that’s what they call us local Shore folk) you can ask me again in a few months if I’m still happy that it is Summer. By then,  my little town at the Jersey Shore will be over run with tourists. It will take me a half hour to get out of my drive way and instead of my ride home from work on a Friday taking me 40 minutes…it will turn into an hour and a half. I’m positive that my outlook will be different then. But for now…I want Summer and all of it’s wonderful smells.  My friend Janine from Things That Make Scents has captured these beautifully with her summer candle creations.
